How to Make Healthy Chicken Quesadillas
We’ve been making this recipe in our household for years, and it never fails to make everyone happy…even the pickiest eaters in the family.
This version features chicken, but feel free to substitute it with any protein you like. Shrimp, tofu, and ground meat are all great options!
Ingredients
- 4-oz Boneless, skinless chicken breast
- 1 6-inch whole wheat or low-carb tortilla (about 60 calories)
- 1/2 cup diced tomato
- 2 romaine lettuce leaves, shredded
- 1/4 cup reduced-fat cheddar cheese, shredded
- 1/4 cup salsa
- Taco seasoning, to taste
- Cilantro, to taste
Preparations
- Season the Chicken. Start by seasoning your chicken breast with taco seasoning. Make sure to cover it evenly for the best flavor.
- Grill the Chicken. Grill or broil the chicken on both sides until it’s cooked through. This should take about 4-6 minutes per side, depending on thickness. Once cooked, cut the chicken into strips.
- Assemble the Quesadilla. Lay your whole wheat tortilla flat and pile on the chicken strips, diced tomatoes, shredded lettuce, reduced-fat cheddar cheese, and salsa.
- Wrap it Up. Fold the tortilla to enclose the filling. You can also toast the filled tortilla in a skillet for a couple of minutes on each side to melt the cheese and crisp up the tortilla.
- Garnish and Serve. Garnish with fresh cilantro if desired, and enjoy your delicious, healthy quesadilla!

Why TryThis Recipe
I’m telling you. This is one of those recipes that you can just slap together, and dont’ have to think about measurements or anything like that.
Plus, you can meal prep the chicken ahead of time.
Another reason to love this recipe is because it’s not only quick and easy but also packed with nutrients. The whole wheat tortilla adds fiber, while the chicken provides a hefty dose of protein.
The fresh vegetables and reduced-fat cheese keep it light but satisfying.
It’s also so versatile! Like I said, you can easily swap out the chicken for tofu if you’re vegetarian or mix up the veggies based on what you have on hand.
How to Enhance Quesadilla
There are lots of ways you can switch up this recipe each week so your family never gets sick of it.
Here are some of my favorite ways to mix it up:
- Add a bit of jalapeño or hot sauce if you like your quesadillas with a kick.
- Toasting the quesadilla in a skillet can add a delightful crunch. If you are a cheese lover, you can add some cheese to the outer part of the wrap and crisp it up!
- Use fresh salsa and cilantro to enhance the flavors.
- Switch out the seasonings.
- Change out the protein you use each time.
